I hadn’t planned on blogging again so soon, but when I posted a video of me eating Matzo brei (fried matzo) on my Instagram/Facebook story, I started getting requests for the recipe. Matzo brei is one of those dishes from my childhood that I looked forward to eating every Passover (and beyond). My Grandma Florence taught me to make it, and now I’m sharing it with you.
Ingredients
- 2 sheets of matzo
- 3 eggs
- 1-2 tbsp butter (to taste)
Directions
- Break up matzo and place in a bowl of water. Leave to soak in and soften (about 5-10 minutes).
- Pour soaked matzos into a colander and use the back of your hand to squeeze out all of the water.
- Beat the eggs in the bowl used to soak the matzos.
- Add the softened matzo to the eggs and combine.
- Melt the butter in a pan.
- Once the butter is melted, pour in the matzo and egg mixture.
- Fry until browned on one side, then flip and fry the other side. Be careful not to let it burn.
I happen to like mine plain, because that’s how I ate it as a kid. It’s a nostalgia thing. But, you do you. If you must add something, I’d suggest something along the lines of whatever you’d add to scrambled eggs.
