Matzo Brei

I hadn’t planned on blogging again so soon, but when I posted a video of me eating Matzo brei (fried matzo) on my Instagram/Facebook story, I started getting requests for the recipe. Matzo brei is one of those dishes from my childhood that I looked forward to eating every Passover (and beyond). My Grandma Florence taught me to make it, and now I’m sharing it with you. This recipe is for an individual serving. If you want to make more, cook them one after another or have multiple fry pans going.

Ingredients

  • 1.5 sheets of matzo
  • 2 eggs
  • 1 tbsp butter

Directions

  1. Break up matzo and place in a bowl of water. Leave to soak in and soften (about 5-10 minutes).
  2. Pour soaked matzos into a colander and use the back of your hand to squeeze out all of the water.
  3. Beat the eggs in the bowl used to soak the matzos.
  4. Add the softened matzo to the eggs and combine.
  5. Melt the butter in a pan.
  6. Once the butter is melted, pour in the matzo and egg mixture.
  7. Fry until browned on one side, then flip and fry the other side. Be careful not to let it burn.

Once it’s browned, plate and enjoy!

I happen to like mine plain, because that’s how I ate it as a kid. It’s a nostalgia thing. But, you do you. If you must add something, I’d suggest something along the lines of whatever you’d add to scrambled eggs.
