Christmas Eve Yummies

In this last post today, you get not one, but TWO recipes… my Christmas Gift to you!

First, the rumaki. My BIL, Tony, makes this every Christmas and New Year’s Eve. Though we are celebrating separately because of COVID, I had to make the rumaki. I texted him to ask how.

After the soaking (see below screen grab of our texts), wrap each water chestnut and a little piece of chicken liver in a third of a slice of bacon and hold in place with a toothpick. Bake at 425 degrees for about 20-25 minutes (until bacon is cooked), and serve.

As for the Minty Morantini, I named it that myself, though TBH, it’s not the most original drink recipe. I took a twist on a Bailey’s martini and added a bit of peppermint schnapps. At first, Hubs made fun of me for buying said schapps on purpose, but he has since seen the light. We’ve been obsessed with these for weeks.

Ingredients

  • 3 oz Bailey’s Irish Cream
  • 2 oz vodka (we like Tito’s)
  • 1/2 oz peppermint schnapps

Directions

  1. Shake over ice.
  2. Strain into a 10 oz martini glass.
  3. If desired, rim with crushed candy canes (simple syrup makes that stick) and garnish with a whole candy cane.
