This was originally a salmon recipe that we had at my cousin Isabel’s house (hence the name). But, it works just as well for chicken.
- 2 boneless, skinless chicken breasts
- 4 T Dijon
- 6 T soy sauce
- 10 T olive oil
- 1 t minced garlic
- Drizzle half the marinade on chicken and bake at 375° for 30 min.
- I tend to serve it with green beans & rice. I like Trader Joe’s Brown Rice Medley for this recipe.
- Once, plated, drizzle remaining marinade on chicken, rice, and green beans.
