Adventures With Avocado Toast

I love avocado, but for some reason, I’ve never tried the amazing trend that is avocado toast. Until now. There are many ways to do it, and I’ve experimented with a few.

Avocado Toast With Egg

My first foray into avocado toast was a pretty basic recipe. I started with Brownberry 12 Grain bread, added 1/2 mashed avo, and an egg over easy (seasoned in the pan with salt and pepper). It was ok. Not crave-worthy at all, but a good post-workout snack.

Avocado Toast with Bacon Salt and Sprouts

Next, I really wanted to try it with bacon (because bacon makes everything better), but I didn’t have any on hand. Instead, I used the same bread as before with the other half of yesterday’s avocado. I mashed it, spread it on the toast, and seasoned it with a bit of J&D’s Mesquite Bacon Salt (which, oddly enough, is low sodium). I topped that with a few sprouts from my latest home grown batch. Now, we’re getting somewhere! It was good, but I know real bacon would make it great. Although, sticking to the bacon salt is definitely more calorie conscious.

Avocado Toast with Red Pepper Flakes

This is perhaps the combo I’ve seen the most when looking online. I mashed half an avocado on my 12 grain toast, then drizzled with a little bit of extra virgin olive oil and lemon juice. Finally, I sprinkled with red pepper flakes and kosher salt. I felt like the flavors didn’t blend (due to the drizzling post-mashing), but that made it kind of fun. Some bites highlighted the EVOO, some the lemon juice, and some the salt. Not one to tend towards using red pepper flakes, I was surprised and intrigued that the heat was more of an after-effect that set in after a few bites.

Avocado Toast with Bacon Salt and Parmesan

This last combo came about because I was really craving the one with bacon salt and sprouts, but I was out of sprouts (I really need to grow a new crop). Poking around at other recipes online I found some liked parmesan on their avo toast. It was really good with the bacon salt.

The Verdict

When it’s all said and done, I love avocado, and would probably eat it any way I could. But, of the first three, I think my favorite was the bacon salt and sprouts avo toast, with the bacon salt and parmesan a close second. Once I have more sprouts around, I daresay I’m going to combine bacon salt, parmesan, sprouts, and throw an egg on top. Voila! A complete meal!
